The secrets of wine - How to become a connoisseur

Italy is home to many wines and knowing them all is almost impossible. But knowing the basics can help to best serve and appreciate them.



What are the secrets of wine? We had a Q&A session with an expert, Mr Morris Lazzoni from Ricci Curbastro, one of the most appreciated wineries in Franciacorta, the wine region where our company headquarters is located. We asked him some questions on wine appreciation.

What is the purpose of a decanter?
We use a wine decanter to “decant” any possible sediment. We use it for aged wines that can have sediment so that we remove it and open the wine up. Or, for younger wines, to aerate them and allow them to improve the aroma.

Which is the most appropriate decanter to use?
A decanter is essential for red wines. With the aged ones, a narrow neck decanter would be recommended as they don’t need much exposure to oxygen, while younger reds would benefit from a large neck carafe and a longer opening up.

Why does a wine need oxygen?
The contact with oxygen allows the wine to open up and improve the aroma. It is possible to let it breathe in its bottle, in a decanter or just in the glass. It is not so easy to know exactly how long we should open our bottle before serving it. We’ll need common sense and we shouldn’t forget that a well-aged wine gets oxygen and evolves while sitting in the glass as well.


Do we pour all the wines in the same way?
When serving wine, you need to be gentle; pour it slowly in the centre of the glass (without touching the rim of the glass with the bottle) to avoid any gurgling. Hold the base of the bottle in your hand, leaving the label visible on the upper side.

Is it a filter needed in some cases?
We use a filter to prevent any sediment in the bottle from getting into the tasting glass. This tool is commonly used in wine shows, where there is no time to decant aged wines before serving.

Are there any situations in which wine should be left in its bottle?
Decanting is not necessary when we reckon there is no sediment or we don’t need a rapid exposure to the oxygen. In fact, we could also decant a wine by letting it sit in its bottle, but we’d need to leave it much longer. We won’t need a decanter when it comes to whites or young red wines that have been fermented in a stainless steel tank for less than 5 years.

Any fundamental advice to look like a real connoisseur?
There are many fundamental principles for a novice, but I’ll suggest the ones you need to better taste the wine. Always hold the glass by the stem and not by the bowl, so as to prevent wine from getting warm and influencing the tasting with any smell your hands may have. Being focused is also important, so, we’d better avoid chaotic locations and disturbing elements such as heat sources and intense smells. Never wear strong fragrances and avoid a heavy meal before wine tasting.

I segreti del vino - Trasforma te stesso in un sommelier!

Il vino prepara i cuori e li rende più pronti alla passione. Così scrisse Ovidio più di mille anni fa. L'Italia è terra di vini, ce ne sono innumerevoli tipologie e conoscerle tutte è quasi impossibile. Ma ci sono alcuni nozioni di base che, anche se non siamo esperti di vino, possono aiutarci a servirlo e gustarlo meglio.



Quali sono i segreti del vino? Abbiamo sottoposto per voi alcune domande ad un esperto, il sig. Morris Lazzoni che collabora con Ricci Curbastro, una delle eccellenze del vino della Franciacorta, il territorio dove ha sede la nostra azienda. Ecco come potrete trasformarvi, all'occorrenza, in un sommelier:

Perché si usa un decanter? A cosa serve?
    Il decanter si usa per la “decantazione” di possibili sedimenti presenti in bottiglia. Si usa con vini rossi di grande affinamento che, appunto, possono avere sedimenti o “fondo”, in modo da separare questi sedimenti dal vino ed ampliare il bouquet dei profumi, oppure anche per arieggiare vini giovani ed eliminare qualche difetto olfattivo iniziale, oppure per ammorbidire eventuali spigolature dovute alla giovane età.
  2. Che tipologia di decanter bisogna usare con i diversi vini?
    Il decanter è indispensabile per i vini rossi. Con i vini invecchiati è meglio usare un decanter con collo stretto, mentre con i rossi più giovani va bene anche a collo largo. Per tutto il resto, la diversità tra decanter è estetica e le differenze nell’utilizzo tra modelli sono veramente minime.
  3. Perché bisogna lasciare ossigenare il vino? Quanto tempo?
    Si fa ossigenare un vino per far liberare e schiudere il bouquet dei profumi in esso contenuti. Si può lasciar ossigenare il vino in bottiglia, nel decanter oppure anche nel calice stesso. Quanto tempo prima aprire la bottiglia? È difficile da stabilire con massima precisione e si va sempre con il buon senso. Quando ci si trova di fronte ad un vino di lungo affinamento quanto tempo prima aprire una bottiglia non è un dato certo: ricorda che anche durante la sosta nel calice il vino evolve e si ossigena.
  4. Tutti i vini si versano nello stesso modo? C'è un modo corretto di versarli?
    Il servizio del vino nel calice deve avvenire in modo delicato e mai brusco. Non bisogna appoggiare o toccare con il collo della bottiglia il calice così, versandolo lentamente, si evita il gorgoglio del vino. Nel caso delle bollicine il consiglio è di versare in due tempi, in modo che non si crei quella poco estetica schiuma dovuta all’anidride carbonica liberata al momento del servizio. Un’altra cosa importante è la presa della bottiglia, fatta con tutta la mano nella parte inferiore. Tenere l’etichetta rivolta verso l’alto inoltre è un gesto elegante e di rispetto nei confronti dei commensali.
  5. Ci sono casi in cui va utilizzato un filtro/colino? Se sì, quali?
    Si usa un colino allo scopo di evitare che eventuali sedimenti presenti in bottiglia possano finire nel calice di degustazione. Spesso è usato in manifestazioni di degustazione quando si hanno bottiglie di vecchie annate, in sostituzione della decantazione. Il colino deve avere maglie strette per evitare che eventuali residui possano rimanere all’interno del vino.
  6. In che casi è invece meglio lasciare il vino nella bottiglia originale?
    In tutti quei casi dove non è necessaria una decantazione, quindi dove si crede che non ci siano sedimenti o fondi da eliminare, oppure nel caso in cui non sia indispensabile ossigenare il vino in maniera più veloce. Anche lasciando la bottiglia aperta il vino ossigena, ovviamente in modo più lento.
    Non ha senso utilizzare il decanter per tutti i vini bianchi e per quei vini rossi vinificati in acciaio particolarmente giovani (meno di 5 anni). Il decanter va sempre utilizzato quando ci sono residui solidi da lasciar depositare e separare.
  7. Qualche altro consiglio fondamentale per sembrare un vero sommelier?
    I consigli principali per un principiante sono tanti, ma ce ne sono alcuni basilari che possono aiutare nella degustazione di un vino. Prendere sempre il calice dallo stelo e non dal bevante (coppa) per evitare di scaldare il vino oppure influire nella degustazione con eventuali odori presenti sulla mano. È importante essere concentrati quando si degusta un vino, per cui meglio evitare situazione caotiche e possibili situazioni di disturbo come fonti di calore eccessive o profumi intensi nell’ambiente. Non indossare mai profumi troppo marcati quando si degusta un vino, perchè potrebbero condizionare la degustazione del vino e non mangiare troppo pesante prima di ogni degustazione.
